Novozymes debuts enzyme for increased fiber in dairy products | 2020-03-25

BAGSVAERD, DENMARK — Novozymes is launching Saphera Fiber, a new lactase enzyme that increases fiber content and reduces sugar in fermented and non-fermented dairy products.

The ingredient works by converting lactose into galactooligo-saccharides (GOS) fibers without reducing natural sweetness. GOS fibers often are associated with improved digestive health, Novozymes said.  

“Saphera Fiber is a new lactase that has been developed to help dairies bring new innovation to the market, as it enables development of products with nutritional claims,” said Emmanuel Michelot, launch manager at Novozymes. “Being a biological solution, it also makes it possible to manufacture dairy products in a sustainable way with less use of artificial or chemically produced ingredients.”
